Ingredients
Scale
Chicken and Base
- 1.5 lbs boneless skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp olive oil
- 3 tbsp butter, divided
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
Noodles and Liquid
- 12 oz wide egg noodles
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup white wine, optional
Seasonings and Herbs
- 1 tsp salt, or to taste
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh chives, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Season Chicken: Pat chicken pieces dry and season generously with salt, pepper, thyme, and garlic powder. Let sit for 5 minutes to absorb flavors.
- Brown Chicken: Heat olive oil in large skillet over medium-high heat. Add chicken and cook 5-6 minutes until golden brown and cooked through.
- Sauté Aromatics: Remove chicken and add 1 tablespoon butter to same pan. Sauté onion for 3-4 minutes until softened, then add garlic for 30 seconds.
- Cook Noodles: Add noodles, broth, and wine if using. Bring to boil, then reduce heat and simmer 8-10 minutes until noodles are tender.
- Add Cream: Stir in heavy cream and remaining butter. Let simmer 2-3 minutes until sauce thickens slightly and coats the noodles beautifully.
- Finish Dish: Return chicken to pan and stir in Parmesan cheese. Taste and adjust seasoning, then garnish with fresh parsley and chives before serving.
Notes
- Don’t skip browning the chicken – it adds crucial flavor and color to the dish.
- The sauce will thicken as it cools, so serve immediately for the best consistency.
- Fresh herbs make a big difference – dried herbs work but fresh taste much better.
- Store leftovers in the refrigerator for up to 3 days in airtight containers.
- Add extra broth when reheating to restore the creamy sauce texture.
- Season generously with salt and pepper – this dish needs proper seasoning to shine.
