Instructions

  1. Prep Chicken: Place chicken breasts in your crockpot and season with garlic powder, onion powder, pepper, and paprika. Make sure chicken is in a single layer for even cooking.
  2. Add Liquids: Pour chicken broth over the seasoned chicken and add butter pieces on top. This creates the cooking liquid base that keeps everything moist and flavorful.
  3. Cook Chicken: Cover and cook on low for 4 hours or high for 2 hours until chicken shreds easily with a fork. Don’t overcook or it becomes dry.
  4. Shred Chicken: Remove chicken from crockpot and shred with two forks. Drain excess liquid from the crockpot, leaving just about 1/4 cup for moisture.
  5. Add Creamy Base: Return shredded chicken to crockpot and stir in softened cream cheese, ranch packet, and half the bacon. Mix until cream cheese is completely melted.
  6. Melt Cheese: Add cheddar cheese and stir until completely melted and creamy. Cook on low for 15 more minutes to let all flavors blend together perfectly.
  7. Garnish & Serve: Top with remaining bacon crumbles and green onions before serving. Taste and adjust seasoning if needed, then serve over rice or in sandwiches.
