Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
- In a large mixing bowl, combine the granulated sugar and melted butter, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon juice and lemon zest until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake for 25-30 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, dust with powdered sugar before serving.
