- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 bell pepper, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cups spinach
- 1/4 cup chicken broth
- Chopped parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and bell pepper, and sauté for 3-4 minutes until they begin to soften.
- Add the minced garlic, ground turkey, smoked paprika, cumin, salt, and pepper. Cook until the turkey is browned and cooked through, about 5-7 minutes.
- Add the diced sweet potatoes and chicken broth to the skillet. Stir well to combine.
- Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.
- Stir in the spinach and cook for an additional 2-3 minutes until wilted.
- Adjust seasoning if necessary, and garnish with chopped parsley before serving.
Notes
- For added spice, consider adding red pepper flakes.
- This dish can be made ahead of time and reheated for quick meals.
- Substitute ground turkey with ground chicken or beef if desired.
