  5. Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender.
  6. Stir in the spinach and cook for an additional 2-3 minutes until wilted.
  7. Adjust seasoning if necessary, and garnish with chopped parsley before serving.
