- 20 wonton wrappers

Instructions
- In a large skillet, heat sesame oil over medium heat.
- Add minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Add ground turkey, breaking it up with a spatula, and cook until browned, about 5-7 minutes.
- Stir in shredded cabbage, carrots, soy sauce, salt, and pepper; cook for an additional 3-5 minutes until the veggies are tender.
- Remove the filling from heat and allow it to cool slightly.
- Place a wonton wrapper on a clean surface and spoon about 2 tablespoons of the turkey filling into the center.
- Moisten the edges of the wrapper with water, then fold it over to create a triangle, pressing to seal. Repeat with remaining wrappers and filling.
- Heat oil in a deep skillet over medium-high heat. Fry egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve warm with dipping sauce of choice.
