Instructions
- Prepare the watermelon by dicing it into small pieces and removing any seeds.
- In the Instant Pot, combine the diced watermelon, sugar, lemon juice, and cinnamon (if using).
- Seal the Instant Pot lid and set to ‘Manual’ on high pressure for 10 minutes.
- Once cooking is complete, carefully perform a quick release of pressure.
- Add the pectin to the mixture and stir well to combine.
- Switch to the ‘Saute’ mode and let the mixture cook for an additional 5-10 minutes, stirring frequently, until it thickens to your desired consistency.
- Remove from heat and let the jam cool slightly before transferring it to sterilized jars.
- Seal the jars and refrigerate. The jam can be stored in the fridge for up to 2 weeks or processed in a water bath for longer shelf life.
