  • 3 medium zucchinis, sliced lengthwise
  • 1 lb ground turkey or beef
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup marinara sauce (low-sugar if preferred)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips and lay them out on paper towels. Sprinkle with salt and let them sit for about 15 minutes to draw out moisture.
  3. In a skillet over medium heat, cook the ground turkey or beef until browned. Drain any excess fat, then stir in the marinara sauce. Remove from heat.
  4. In a bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and pepper until well mixed.
  5. In a baking dish, spread a thin layer of the meat sauce on the bottom.
  6. Layer zucchini slices over the sauce, then spread half of the ricotta mixture over the zucchini.
  7. Add another layer of meat sauce, followed by more zucchini and the remaining ricotta mixture.
  8. Top with the remaining meat sauce, then sprinkle mozzarella and Parmesan cheese on top.
  9. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  10. Let the lasagna cool for 10 minutes before slicing and serving. Enjoy!
