- 3 medium zucchinis, sliced lengthwise
- 1 lb ground turkey or beef
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup marinara sauce (low-sugar if preferred)
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips and lay them out on paper towels. Sprinkle with salt and let them sit for about 15 minutes to draw out moisture.
- In a skillet over medium heat, cook the ground turkey or beef until browned. Drain any excess fat, then stir in the marinara sauce. Remove from heat.
- In a bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and pepper until well mixed.
- In a baking dish, spread a thin layer of the meat sauce on the bottom.
- Layer zucchini slices over the sauce, then spread half of the ricotta mixture over the zucchini.
- Add another layer of meat sauce, followed by more zucchini and the remaining ricotta mixture.
- Top with the remaining meat sauce, then sprinkle mozzarella and Parmesan cheese on top.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing and serving. Enjoy!
